Mencía REGINA VIARUM

Manual harvesting and selection of the best grapes from our estates. Destemming and crushing of the grapes in cold. Maceration for 72 hours at very low temperature, followed by controlled-temperature fermentation, with “délestage” and daily pumping over at a maximum of 28º to extract all its color, aroma, and complexity.

Aging on fine lees for four months, providing greater smoothness and uniqueness to the wine.
