72-hour maceration at very low temperature, followed by fermentation at a controlled temperature with “délestage” and daily pumping over at a maximum of 28º to extract all of its color, aroma, and complexity.

Pairs well with traditional dishes from the region such as Marmitako de bonito (Basque-style tuna stew), arroz de conejo (rabbit and rice), carne guisada (stewed meat), and lightly aged cheeses.
